Since the late 90s, global fast food chains like McDonald's and Burger King have dominated how Indians eat out. By 2015, while burgers and pizzas ruled, an IIT graduate saw an opportunity to reclaim India's culinary roots.
Vishal Jindal started Biryani By Kilo in 2015 when he was 40 years old. After a successful run in hedge funds and private equity firms, where he made zero investments in any food business, Jindal wanted to step out of his comfort zone with the aim to create a pan-international brand for biryani based out of India.
In a podcast, Jindal shared that he has had a risk-taking tendency which pushed him to challenge his comfortable life. If not at 40, 50 would have been too late, he remarked. Speaking about his brand, Jindal said that quality and authenticity are the two major foundational principles of Biryani By Kilo.

The company is focused on delivering fresh-cooked meals, regardless of the time required. Jindal, reflecting on the company's early days, recounted how preparing biryanis from scratch and delivering them took over an hour, making it hard to communicate this to consumers who were accustomed to fast food.
Jindal also shed light on the trend of food delivery taking over dining in. Online food delivery is growing 1.7 to 1.8 times the food and beverage business and it will continue to grow at the same rate, the CEO believes.
When asked what is the one message he’d give to his younger self, Jindal remarked that it would’ve been rather difficult for him to embark on the journey had he known all the challenges. He would not change anything about his journey, the CEO said.
